Bread: A Baker's Book of Techniques and Recipes
This book provides a detailed description of the bread making process. There are over 100 recipes, all in bakers percentage formulae and with home and professional baker volumes. I have not cooked my way through this book yet, but so far, every recipie I have tried has made sense and turned out great. I think I prefer his recipe for Semolina bread over any other I have seen elsewhere for that style.
